Things That Make You Go Mmmmmm!

The following recipe is THE BOMB!!!!!!!!!!!!!! My mom made this a few years ago and I thought I died and went to heaven, went back for thirds, and i believe I may have also eaten this for my dessert instead of pie! The pineapple, cheese and Ritz create the most delectably sweet and savory dish, that is just as yummy hot out of the oven or chilled next morning for breakfast after unwrapping the gifts, so you can call this a side or dessert. Not to mention it's totally cheap and easy to make! Can't miss!

Pineapple Cheese Casserole

2 – 20 oz cans crushed pineapple (drained)
1-1/2 C. sugar
¾ C. flour
2 C. shredded sharp Cheddar cheese
1 stack Ritz crackers
1-1/2 – 2 sticks butter

Put pineapple into casserole dish. Mix together flour, sugar and cheese, then mix into pineapple. Crush Ritz crackers and spread on top. Melt butter and pour over pineapple.

Bake at 350 degrees for 30 minutes. Can be served hot or cold.

My husband and I both made this for separate potlucks we attended for Thanksgiving and the pans were just completely cleaned out! I mean to post it for Thanksgiving, but the night of I realized was just too late! So I was determined not miss the opportunity to share it before Christmas so none of you would miss out on this!! Yeah, I know last week would have been better, but I'm sure many of you (not namin' names!) have not yet bought all the ingredients yet for your holiday meals!! ;)


You may want to add a recipe card (the 10 I printed out were all gone when I came to retrieve the pan) or a little note saying what it is next to the dish; to some it might look like scalloped potatoes! (Boy, were those people surprised when they bit into it! LOL!) Please enjoy!

  2. Thanks for sharing this recipe. Hmmm butter, sugar, pineaple- what's not to love? I am going to try the following recipe which they talked about on the radio this morning. They said it is a side dish to die for. Here you go:

    Marianne Murciano's Famous Corn Souffle.


    Ingredients:

    8oz Sour Cream
    1 can Creamed Corn
    1 can Regular Corn
    2 Eggs (Beaten)
    1 stick of Butter
    1 box of Jiffy Corn Muffin mix.



    Mix in bowl and pour into casserole dish.
    Bake at 350 degrees for 45 minutes.

  4. OMG I was looking for that recipe just today but couldn't find it in my collection. A lady I worked with several years ago made it and it was FABULOUS! I think I have all the ingredients except the Ritz. TFS

  12. Ohhh by the way... I have a wonderful cake called "Cajun Cake"... which uses pineapple and it's SUPER delish. I will share it later... I don't have it with me at work. It says sooooooo moist!

  13. Gotta do this pineapple receipe, but not sure of the measurment for the butter. I measure butter by pound, half pound or quarter pound, so not sure how much a stick or l 1/2 sticks is. Could you reply to this. Thanks so much.

  14. Thank you so much for this DELICIOUS recipe!!! I made this for Christmas dinner at our son's. I made it using just 1 1/2 sticks of butter. I had never heard of this before and it really caught my eye. SOOO, the results were absolutely DESSERT! We did eat it warm with dinner, but it would most definitely be a delicious dessert. Now, my son said he thought there was too much sugar and too much butter and he would want to try it with cutting those back even more. We'll see!

    I do know that the next time we have a potluck dinner to attend this will definitely be the dish I bring!! Thanks again. I will also be trying tlgir353's Corn Souffle dish!!! Thanks for sharing that also.

  15. I had this for the first time last summer. I've been meaning to make it but couldn't find cheddar cheese until last week. I made it for Christmas for the first time, but tweaked it a little bit. I doubled the Ritz crackers and the pineapples, and only used a stick of butter. You can't buy crushed pineapples here, so I used chunks and it turned out better than expected.
